You know I hate baking so you can imagine my excitement when I tasted these Flourless Chocolate Cashew Butter Zucchini Muffins and nearly melted with joy and pleasure–they are that good! This one bowl recipe was not only easy to make–it is chock-full of really good-for-you ingredients. Father’s day is this weekend! Like many dads, mine is a grilling machine. That’s his happy place in “the kitchen”. Sure, you can grill-up a batch of BBQ chicken or sausage (staples at my parents house) or you can add some inspiration to the menu this year! Meats are a go-to grill option but fruits and vegetables should not be ignored. The grill has a wonderful way of caramelizing the natural sugars of the ingredients.
