While today may be the first official day of fall, the 90 degree weather has another story to tell. Hot and humid hardly has me craving stews and pumpkin so I’m taking advantage of this opportunity to share one last summer-ish dish. Honestly, this One Pan Greek Shrimp and Vegetable Bake will likely make my dinner rotation long into the fall and winter months because it’s a crowd pleaser and, of course, it’s easy! It’s naturally gluten free and easily dairy free, just skip the cheese! Whole tomatoes, zucchini and onions roast up with shrimp and fresh herbs in minutes.
