farmersThings on toast. Who doesn’t love them? Considering the idea that just about anything spread on toast gets people excited, I figured I would offer a slightly different play on the idea. Avocado, goat cheese, ricotta and hummus are now staple spreads in many of our houses but Farmer’s cheese might be a new one to you. In celebration of the spring bounty at the market, here are three variations of farmer’s cheese crostini that are really easy to create. I know, it’s Monday and that usually means a “Mindful Monday” post but this little guy is long overdue! Spiced Cranberry Apple SmoothieCold and flu season is upon us so it is important that we do everything in our power to support our immune systems so we don’t wind up sick. This Cranberry Apple and Ginger smoothie will definitely do the trick. Winter smoothies, though counter-intuitive, are a delicious, nutrient dense way to consume a variety of goodies including out-of-season produce which is still available frozen. Plus, I love playing around with seasonal flavors by using citrus, ginger and savory spices like cardamon and cinnamon which can even substitute for added sugar! {Nourish} Wild Blueberry and Almond Smoothie with Hemp Seeds

Wild Blueberry and Almond Smoothie with Hemp Seeds by @KatieCavutoRDWild Blueberry and Almond Smoothie with Hemp Seeds by @KatieCavutoRDWild Blueberry and Almond Smoothie with Hemp SeedsFlax and chia have become staples in my kitchen so I was starting to feel bad when I realized hemp seeds were being left out.  A recent recipe contest had me playing around with wild blueberries (stay tuned for more posts on that subject) and the left over bounty in my freezer led to this recipe and my first go at incorporating hemp seeds.  Rich in anti-inflammatory fats and protein, hemp seeds are versatile and easy to include in your diet.  Try them raw, toasted, sprinkled on a salad or yogurt, mixed with a grain or, of course, in this smoothie.   The bonus, wild blueberries have more antioxidant power than their cultivated counterparts and, more importantly, more flavor!
