{Nourish} Holiday Side Dish Round-Up

Orange zest as well as earthy, savory herbs and spices have a tendency to slay me. I am honestly getting giddy just thinking about our holiday spread. Thanksgiving may be  my favorite meal of the year.  While I love tradition, I also enjoy introducing new flavors, grains and vegetables to our holidays so keep it interesting. So much so that I am cooking up a Moroccan Spiced Turkey this year which has me daydreaming of the aromatic scents that will fill my kitchen this time next week. Father’s day is this weekend! Like many dads, mine is a grilling machine. That’s his happy place in “the kitchen”. Sure, you can grill-up a batch of BBQ chicken or sausage (staples at my parents house) or you can add some inspiration to the menu this year! Meats are a go-to grill option but fruits and vegetables should not be ignored. The grill has a wonderful way of caramelizing the natural sugars of the ingredients. {Mindful Monday}: I Don’t Like Kale — Eek!

What should I eat if I don't like kale?Actually, I do like kale but I have many clients who don’t. They often admit this to me within the first five minute of a conversation. It goes something like this: “I have been trying really hard to eat better– but I don’t like kale”. Then this look of failure washes across their face. Conversely, I usually giggle a bit and them give them a hug. Why? Because it is 100% OKAY to not like kale. Loving kale does not win you a healthy eating gold medal. Not even close. {Nourish} Curried Baby Eggplant

Baby eggplant are a CSA staple this time of year and well, they are so darn cute to boot. As you know, I am not a fan of spending hours in the kitchen so I love the fact that I can whip these up in a pinch. Contrary to popular belief, you do not have to peel, fry and/or saturate eggplant in oil to make it palatable. This recipe is proof. Its wildly flavorful and easy to make. Sounds like a winner to me!
