Healthy Banana Chocolate Chip Muffin Recipe 

Healthy muffins are a staple in my meal prep routine. Great for on-the-go breakfasts and healthy snacks, you can whip them up in a cinch with just one bowl. Plus, they are easy enough that little hands can help. I used my MIX-AND-MATCH Morning Muffin Recipe as the foundation for this variation. Made with nutrient dense almond flour, they are naturally gluten-free, dairy-free and really delicious. Just ask Hudson’s first grade class. They gobbled these up a few weeks ago!

  • Add one ripe banana to the wet ingredients in the below recipe. You can even decrease the sugar a bit as the banana adds extra sweetness. 
  • I love mini chocolate chips because a few go a long way. We use 1/4 of a cup and they are perfectly chocolaty. 
  • Almond flour can be expensive, I get it! I swapped 1 cup of almond flour for 1 cup of rolled oats when I made these for Hudson’s class. They turned out great!

{Nourish} Healthy Cooking Video: Everyday Chicken One Pan Meal

This roasted chicken recipe with smoked paprika, oregano, maple and mustard is a true representation of week nights in my house. I roast chicken at least once a week and this is one of our favorite combinations. Whether I choose chicken thighs (are current favorite) or chicken breasts, I also maximize the fact that my oven is on by adding potatoes, sweet potatoes, winter squash and a more traditional vegetable to the mix. {Nourish} One Pan Greek Shrimp and Vegetable Bake

While today may be the first official day of fall, the 90 degree weather has another story to tell. Hot and humid hardly has me craving stews and pumpkin so I’m taking advantage of this opportunity to share one last summer-ish dish. Honestly, this One Pan Greek Shrimp and Vegetable Bake will likely make my dinner rotation long into the fall and winter months because it’s a crowd pleaser and, of course, it’s easy! It’s naturally gluten free and easily dairy free, just skip the cheese! Whole tomatoes, zucchini and onions roast up with shrimp and fresh herbs in minutes.
