My breakfast of late has been a bowlful of pre-made grains like quinoa or buckwheat that I heat with almond milk, ground flax and spices. Come the weekend though, I am craving something a bit more hearty and this Egg Scramble with Kale and White Beans has done the trick. If you’re a lover of brunch, then you are going to love this Socca with Poached Eggs, Roasted Tomatoes and Fresh Basil from my cookbook, Whole Cooking and Nutrition. A lot of people do though. Regardless, Mother’s Day is about slowing down and simplifying life for a moment. That translates to easy, delicious food with very little clean-up, right!? {Nourish} Chicken Sausage, Kale and Broccoli Frittata

 Chicken Sausage, Kale and Broccoli Frittata If you made a resolution to meal prep more, than this is the recipe for you. I have always been a fan of the frittata and don’t you worry, I will give you a full on list of the reasons why. This particular frittata is perfect for winter as I used in season vegetables and yes, some were frozen! My personal opinion is that chicken sausage makes any dish better (it is a staple in my house) but, if you aren’t into that you can make a vegan or vegetarian version that will be equally as yummy and nutritious. {Nourish} Wrangle Your Freezer + One Pot Freezer Fried Rice

I tend to have a well stocked freezer which rocks until I forget about those foods that tend to lurk towards the back or are buried below the ingredients we use more often. That is why I try to commit to a monthly freezer inventory. When i keep track of the foods on hand it is less likely anything will go to waste because (reality check!) even frozen foods have a life-span and it may be shorter than you think!
