Father’s day is this weekend! Like many dads, mine is a grilling machine. That’s his happy place in “the kitchen”. Sure, you can grill-up a batch of BBQ chicken or sausage (staples at my parents house) or you can add some inspiration to the menu this year! Meats are a go-to grill option but fruits and vegetables should not be ignored. The grill has a wonderful way of caramelizing the natural sugars of the ingredients. {Nourish} Curried Baby Eggplant

Baby eggplant are a CSA staple this time of year and well, they are so darn cute to boot. As you know, I am not a fan of spending hours in the kitchen so I love the fact that I can whip these up in a pinch. Contrary to popular belief, you do not have to peel, fry and/or saturate eggplant in oil to make it palatable. This recipe is proof. Its wildly flavorful and easy to make. Sounds like a winner to me!
