{Nourish} Fall Harvest Salad with Roasted Squash, Apples, Pomegranate and Pumpkin Seeds

Creating a festive salad might be one of my favorite contributions to our Thanksgiving table and I have to say, I am in love with the moody vibe of this offering. Roasted delicata squash (a family favorite) dances with the crisp, sweet apples, tart pomegranate and earthy pumpkin seeds. A simple orange maple vinaigrette, lusciously coats the bed of dark greens which includes kale, spinach and arugula.   Continue reading “{Nourish} Fall Harvest Salad with Roasted Squash, Apples, Pomegranate and Pumpkin Seeds”

{Nourish} Chipotle Butternut Squash White Bean Dip

I’ve been making variations of this dip for years. Smoky and slightly sweet, it encapsulates all the feels of this time of year. Plus, I love the fact that this dip is packed with antioxidants thanks to the butternut squash that you might not even know is in there. Perfect for a holiday spread, a football game or soulful snacking, this Chipotle Butternut Squash Dip is definitely worth making! Nourish: Roasted Chicken Thighs with Olives, Potatoes, Artichokes and Lemon

The last three months feel like a blur and I feel a bit sheepy for being MIA. That being said, I have been doing my best to keep yummy nourishing food on the table at our house and I’ve been thinking of you all while I’m at it. I continue to patiently await for Spring to actually arrive (snow again this morning, what the heck!) so I figured an early Spring recipe would possibly encourage her to show up. A tasty and simple one pot meal, this recipe for Braised Chicken Thighs with olives, potatoes, artichokes and lemon is an easy weeknight meal the whole family will enjoy.  Continue reading “Nourish: Roasted Chicken Thighs with Olives, Potatoes, Artichokes and Lemon”

{Nourish} Healthy Cooking Video: Easy Almond Flour Banana Chocolate Chip Muffins

Healthy Banana Chocolate Chip Muffin Recipe

Healthy muffins are a staple in my meal prep routine. Great for on-the-go breakfasts and healthy snacks, you can whip them up in a cinch with just one bowl. Plus, they are easy enough that little hands can help. I used my MIX-AND-MATCH Morning Muffin Recipe as the foundation for this variation. Made with nutrient dense almond flour, they are naturally gluten-free, dairy-free and really delicious. Just ask Hudson’s first grade class. They gobbled these up a few weeks ago!

How To:

To get the recipe, check out this blog post: Mix and Match Morning Muffins

  • Add one ripe banana to the wet ingredients in the below recipe. You can even decrease the sugar a bit as the banana adds extra sweetness.
  • I love mini chocolate chips because a few go a long way. We use 1/4 of a cup and they are perfectly chocolaty.
  • Almond flour can be expensive, I get it! I swapped 1 cup of almond flour for 1 cup of rolled oats when I made these for Hudson’s class. They turned out great!
