Coconut Curry Chicken @katiecavutord Weeknight dinners were getting a bit redundant until I resurrected this super simple Coconut Chicken Curry recipe that is super easy to make vegetarian for meatless meals. We have enjoyed this curry as a family and I’ve made it for dinner guest. I’ve even been told that it’s way tastier than take-out which is a huge win in my book. Curry in a hurry, yes it is. On the table in 20 minutes, this flavorful and warming one pot meal allows the cook in your house to get creative with spices and add-in’s. Our current favorites? {Nourish} Curried Quinoa with Butternut Squash and Pepitas

curried quinoa butternut suqashFall demands bold flavor profiles and curries are a natural fit. Both Indian and Thai curries pair perfectly with in-season produce like winter squash, cauliflower and eggplant. This curried quinoa dish is a great example. I am a huge fan of cooking my grains with a variety of spices that are soaked up with the cooking liquid. Yum. This recipe is a hearty side-dish that is elegant enough for your holiday table (I know, we are not quite there but it’s worth the mention). Packed with plenty of plant based protein from the quinoa and seeds (and optional beans)–it’s a stand alone meal as well. The earthy, warming curry paired with the sweetness of the butternut squash makes this a truly comforting and satisfying dish–no matter it use. Oh, and by the way…it would be the perfect side dish to the Maple Roasted Chicken with Figs and Grapes that I posted earlier this week!

{Nourish}: Spice Up Your Popcorn with a Shake, shake, shake!

As the weather starts to cool I begin to crave comfy clothes, snuggles and snacking. I am so excited that my new(ish) home has a fireplace which is a luxury I have not had the pleasure of regularly enjoying since I moved out of parents house almost 20 years ago (whoa). I have to pause for an “I feel old” moment.

Okay, back to fires, snuggles and movies which feels more magical than thinking about my age…hahahaha. Movies and popcorn are the best of friends but sadly, most store-bought popcorns are crap. There I said it. Crap!  Don’t freak out though–popcorn is a whole food snack that can be purchased and or cooked in a variety of healthy ways– so put on your sweats, grab your slippers and get ready for some healthy noshing and relaxing! {Nourish} Curried Baby Eggplant


Baby eggplant are a CSA staple this time of year and well, they are so darn cute to boot. As you know, I am not a fan of spending hours in the kitchen so I love the fact that I can whip these up in a pinch. Contrary to popular belief, you do not have to peel, fry and/or saturate eggplant in oil to make it palatable. This recipe is proof. Its wildly flavorful and easy to make. Sounds like a winner to me!
