Father’s day is this weekend! Like many dads, mine is a grilling machine. That’s his happy place in “the kitchen”. Sure, you can grill-up a batch of BBQ chicken or sausage (staples at my parents house) or you can add some inspiration to the menu this year! Meats are a go-to grill option but fruits and vegetables should not be ignored. The grill has a wonderful way of caramelizing the natural sugars of the ingredients. Strawberries, strawberries, strawberries! Hooray for strawberry season! I love incorporating fruit into savory recipes and fruit and fish–they are a match made in heaven! Does the thought of cooking fish freak you out? I spend a good part of my week cooking with my clients and I have found that many people are freaked out about cooking fish! They love fish. They often order it when they are out to eat but they completely avoid cooking fish at home. This kills me because cooking fish is really easy–I promise. Especially when you roast it. {Nourish} Wild Blueberry and Coconut Cream “Slush”

Wild Blueberry and Coconut CreamIf you can get over the fact that it’s freezing outside you are in for a treat! This is a re-vamped version of one of my favorite childhood snacks. When ever we had frozen blueberries in the house, I would fill up  my bowl and then douse them in milk. The milk would form a slushy coating around the outside of each berry thus creating a simple, fun, sweet ice-cream like treat. I happened to have a big bag of blueberries in my freezer last week and this memory washed over me. The result, a more sophisticated and equally as delicious version of my childhood treat. {Nourish} Smoothie Bowl 101 + The Nourished Green Smoothie

True Story: I have been pretty opposed to joining the smoothie bowl craze. I’m a creature of habit in many ways and am super satisfied drinking my morning smoothie so I figured there was no need to reinvent the wheel. I have, however, always been a sucker for toppings  which is ultimately the thing that swayed me to dive in and try this trendy bowl of goodness. Honestly, I had no idea what made a smoothie different from a smoothie in bowl so I did a little research and here is the answer, a how-to… and a tasty recipe to get you spooning up your smoothie too–to my surprise–it’s divine!

{Nourish} Strawberry Chia Jam

We are celebrating red foods this month for National Heart Health Month.  This recipe is one of the tastiest I have made in a long time and more importantly, so simple.  We gobbled it up at our house!  I love how delicious and healthy this is.  Start with berries like strawberries or raspberries.  Add some natural sweetener like honey.  Chia seeds which as loaded with fiber and healthy fats do the job of thickening this up.  God, it is good.  enjoy.

 
 
 
 
 
 

Strawberry Chia Jam

  • 2 cups fresh or frozen strawberries
  • 1 cup water
  • 1 tablespoon honey
  • 2 tablespoons chia seeds (we used white in the recipe)

In a small saucepan, heat the berries, honey and water to defrost frozen berries or soften fresh (3-5 minutes). Mash with a fork or pulse in food processor to desired consistency.  Stir in the chia, cover and refrigerate overnight.
