Nourish: Roasted Chicken Thighs with Olives, Potatoes, Artichokes and Lemon

The last three months feel like a blur and I feel a bit sheepy for being MIA. That being said, I have been doing my best to keep yummy nourishing food on the table at our house and I’ve been thinking of you all while I’m at it. I continue to patiently await for Spring to actually arrive (snow again this morning, what the heck!) so I figured an early Spring recipe would possibly encourage her to show up. A tasty and simple one pot meal, this recipe for Braised Chicken Thighs with olives, potatoes, artichokes and lemon is an easy weeknight meal the whole family will enjoy.  Continue reading “Nourish: Roasted Chicken Thighs with Olives, Potatoes, Artichokes and Lemon”

{Nourish} 6 Healthy Hacks to Upgrade Packaged Foods

Friends! What a wild few weeks it’s been. I have had “BLOG” on my to-do list every week and still, I haven’t been able to keep up with it. I’m sorry! Between trips to and from Florida for Spring Training with the Phillies (no complaints here!) and a sick kiddo (this cold and flu season is nutty!), life has felt non-stop because it has been. What better time to talk about healthy hacks for packaged foods, right? My fridge has felt bare but we’ve still managed to get some healthy meals on the table. The trick, work with what you’ve got! When fresh foods are sparse, do a freezer and pantry inventory just to connect with your food stash. You’ll be amazed at what you find and what you can do with it!  Continue reading “{Nourish} 6 Healthy Hacks to Upgrade Packaged Foods”

{Nourish} Healthy Cooking Video: Easy Almond Flour Banana Chocolate Chip Muffins

Healthy Banana Chocolate Chip Muffin Recipe

Healthy muffins are a staple in my meal prep routine. Great for on-the-go breakfasts and healthy snacks, you can whip them up in a cinch with just one bowl. Plus, they are easy enough that little hands can help. I used my MIX-AND-MATCH Morning Muffin Recipe as the foundation for this variation. Made with nutrient dense almond flour, they are naturally gluten-free, dairy-free and really delicious. Just ask Hudson’s first grade class. They gobbled these up a few weeks ago!

How To:

To get the recipe, check out this blog post: Mix and Match Morning Muffins

  • Add one ripe banana to the wet ingredients in the below recipe. You can even decrease the sugar a bit as the banana adds extra sweetness.
  • I love mini chocolate chips because a few go a long way. We use 1/4 of a cup and they are perfectly chocolaty.
  • Almond flour can be expensive, I get it! I swapped 1 cup of almond flour for 1 cup of rolled oats when I made these for Hudson’s class. They turned out great!

{Nourish} Gut Health 101 + Citrus Ginger Beet and Apple Salad

Beet and Apple Salad @katiecavutordI’m all about setting positive intentions around food and my latest aim is to include more gut-healthy foods into my daily routine because the health of our gut affects our overall health in really big ways which I’ll explain. Gut health aside, this Citrus Ginger Beet and Apple Salad that is made with Farmhouse Culture’s Fermented Ginger Beets is divine. Slightly sweet and deliciously tart and tangy, this healthy recipe that I created on behalf of Farmhouse Culture, is easy to make and perfect for the season. Plus, you can save the ginger beet juice and use it to pickle perfectly pink hard-boiled eggs (instructions in the recipe notes). You’re going to love it. {Nourish} 20 Minute Coconut Chicken Curry

Coconut Curry Chicken @katiecavutord Weeknight dinners were getting a bit redundant until I resurrected this super simple Coconut Chicken Curry recipe that is super easy to make vegetarian for meatless meals. We have enjoyed this curry as a family and I’ve made it for dinner guest. I’ve even been told that it’s way tastier than take-out which is a huge win in my book. Curry in a hurry, yes it is. On the table in 20 minutes, this flavorful and warming one pot meal allows the cook in your house to get creative with spices and add-in’s. Our current favorites? Sweet potatoes, kale and the ridiculously easy honeydew salad pictured above. Continue reading “{Nourish} 20 Minute Coconut Chicken Curry”
