{Nourish} Gnocchi with Roasted Shrimp, Tomatoes and Artichokes + Cookbook Giveaway!

A variation of roasted shrimp with tomatoes and garlic has graced our holiday table for the past few years. It’s become a family favorite. So much so that it’s made it’s way into our weeknight meal rotation. Most recently as this Gnocchi with Roasted Shrimp and Artichokes which was inspired by a recipe from “The 30-Minute Mediterranean Diet” cookbook.  Of course, it’s so quick and simple to make. But we’re truly swooning over this recipe because it’s delicious and easy to modify for many dietary preferences. For those of you that abstain from animal proteins or gluten, read on for a  few variations I am sure you will love. The shrimp are actually the side-note to the decadent roasted tomatoes that are good enough to eat on their own. I’ve always found it to be strange that there are certain foods we only eat on Thanksgiving. It’s as if we are not allowed to enjoy them at other times throughout the year? What’s with that? {Nourish} Fall Harvest Salad with Roasted Squash, Apples, Pomegranate and Pumpkin Seeds

Creating a festive salad might be one of my favorite contributions to our Thanksgiving table and I have to say, I am in love with the moody vibe of this offering. Roasted delicata squash (a family favorite) dances with the crisp, sweet apples, tart pomegranate and earthy pumpkin seeds. I’ve been making variations of this dip for years. Smoky and slightly sweet, it encapsulates all the feels of this time of year. I am always looking for ways to cut down on prep, especially for weeknights dinners and special events. Sometimes this can be a simple as having to chop less!
