Healthy Banana Chocolate Chip Muffin Recipe
Healthy muffins are a staple in my meal prep routine. Great for on-the-go breakfasts and healthy snacks, you can whip them up in a cinch with just one bowl. Plus, they are easy enough that little hands can help. I used my MIX-AND-MATCH Morning Muffin Recipe as the foundation for this variation. Made with nutrient dense almond flour, they are naturally gluten-free, dairy-free and really delicious. Just ask Hudson’s first grade class. They gobbled these up a few weeks ago!

- Add one ripe banana to the wet ingredients in the below recipe. You can even decrease the sugar a bit as the banana adds extra sweetness.
- I love mini chocolate chips because a few go a long way. We use 1/4 of a cup and they are perfectly chocolaty.
- Almond flour can be expensive, I get it! I swapped 1 cup of almond flour for 1 cup of rolled oats when I made these for Hudson’s class. They turned out great!
