2 cups old fashioned rolled oats (gluten-free optional)
1/2 cup sliced almonds
1/2 cup unsweetened shredded coconut
1 cup raisins
¾ cup peanut butter
½ cup honey
½ cup mini chocolate chips
Combine the first 3 ingredients in a food processor and pulse to chop, then add raisins and pulse.
Move the mixture to a bowl. Add the remaining ingredients and stir to combine.
Place wax paper in an 8x8 pan and spoon mixture into it. Using the back of a spoon and your fingers, press the mixture evenly to the edges. Press down firmly on the bars and edges to release any air. Chill in fridge for 30 minutes. Cut into 10 bars.
