{Nourish} No Bake Chocolate Peanut Butter Oat Bars
Store bought granola bars tend to be lacking. Lacking in flavor and nutrition that is. Fortunately, it’s extremely easy to make your own. So easy that there is no cooking involved. Simply mix the ingredients (there are only seven), press them into a pan, cut and enjoy. Plus, you can mix and match the the nuts and dried fruit to please your clan. Hearty, naturally sweet and super filling, you’re going to love these No Bake Chocolate Peanut Butter Oat Bars that happen to be gluten-free, dairy free and vegetarian to boot.
While I would love to say I created this recipe for Hudson, I didn’t. He loves them though and you will too. You know who else loves them? My other kids, the Phillies. This nutrient dense bar of goodness was created for them. It’s the perfect snack to keep them fueled on the field and with seven simple ingredients, oats, coconut, almonds, raisins, chocolate chips, honey and peanut butter, they can fuel you and your little athletes too.
Natural Sweetness
There’s nothing but good stuff in these. Sweetened with raisins and honey, I ditched all of the excessive refined sugars that are found in most store bought granola bars. That being said, the addition of dark chocolate chips makes these bars feel like a truly sweet treat.
The Benefits of Healthy Fats
You can mix and match your healthy fats when you create this recipe. For this batch I used peanut butter, almonds and shredded coconut. The healthy fats are anti-inflammatory and really satisfying. Plus the nuts and nut butter balance this bar with the addition of protein to boot. You could use almond butter, cashew butter (my current favorite) or even sunflower seed butter or tahini to keep them nut free. In that case, swap the almonds for sunflower or pumpkin seeds.
Meal Prep Tips
These bars are the perfect addition to your batch cooking routine. Simply add the ingredients to a bowl, mix them up and press them into a pan. The fats keep them moist and fresh for over a week. Just store them in a sealed container to that they don’t dry out. Hearty enough for breakfast or an afternoon snack, your going to love these no bake bars.
No Bake Coconut Peanut Butter and Oat Bars

Ingredients
- 2 cups old fashioned rolled oats (gluten-free optional)
- 1/2 cup sliced almonds
- 1/2 cup unsweetened shredded coconut
- 1 cup raisins
- ¾ cup peanut butter
- ½ cup honey
- ½ cup mini chocolate chips
Instructions
- Combine the first 3 ingredients in a food processor and pulse to chop, then add raisins and pulse.
- Move the mixture to a bowl. Add the remaining ingredients and stir to combine.
- Place wax paper in an 8x8 pan and spoon mixture into it. Using the back of a spoon and your fingers, press the mixture evenly to the edges. Press down firmly on the bars and edges to release any air. Chill in fridge for 30 minutes. Cut into 10 bars.

These look good and I also like the real food ingredient list! Do you store them in the fridge or is room temp fine? Not worried about food safety, just wondering if they’ll be stickier at room temp.
