Hazelnuts and dark chocolate, need I say more. I am obsessed with this cake. With only a few ingredients and one bowl, this Double Chocolate Hazelnut Cake will be out of the pan and into your mouth in less than 45 minutes.  Oh, and by the way, it’s good. Like, really, really good. So good I may actually be enjoying baking!!??Naturally gluten-free, grain-free, and with no refined sugar, this cake is made with 100% hazelnut flour and you can actually feel good about eating it.  Nutty and rich, the hazelnut flour comes to life when a touch of real maple syrup and dark cocoa powder are mixed in. The dark chocolate chips–they take it to the next level of decadence and a pinch of cinnamon really adds to the savory, yet sweet depth of flavor this cake brings to the table. If you love Nutella you will love this cake. I can guarantee it.

Note: hazelnut flour can be less available than almond flour so feel free to make the swap if need be though it won’t have the same hazelnutty flavor we all love.  With that being said, Wegman’s usually has the hazelnut flour so I stock up when I am there. Indulgent Double Chocolate Hazelnut Cake

Ingredients
  1. 2 eggs
  2. 2/3 cup unsweetened vanilla almond milk
  3. 1 tablespoon almond butter
  4. ½ cup real maple syrup
  5. ¼ teaspoon vanilla extract
  6. ½ cup unsweetened dark cocoa powder
  7. 2 cups hazelnut flour
  8. 1 teaspoon baking powder
  9. ¼ teaspoon ground cinnamon
  10. ¼ teaspoon sea salt
  11. ¾ cup dark chocolate chips, divided
Instructions
  1. Preheat oven to 375.
  2. In a blender or mixing bowl, combine the eggs, milk, almond butter, maple, vanilla extract and dark cocoa powder.
  3. In a medium sized bowl, combine the flour, baking powder, cinnamon and sea salt. Stir in the egg mixture and whisk to combine. Fold in ½ cup chocolate chips.
  4. Coat a 9x9 baking dish to prevent sticking. Add the batter. Top with remaining chocolate chips.
  5. Bake for 25-30 minutes.
