{Nourish} Spiced Wild Blueberry, Quinoa + Oat Breakfast Bar
Looking for a healthy, on-the-go breakfast option? This quinoa and oat bar is for you. I am a huge fan as these bars taste like dessert but are nourishing enough to stand alone as a healthy breakfast. Gluten and dairy free, breakfast on the run never tasted so good. Cooked quinoa and oats combine with eggs, nut butter, coconut cream, cardamom, cinnamon and orange zest (yes, still obsessed) to create a truly tasty and nutrient dense dish. Rich in protein, healthy fats and fiber, these bars have staying power as well as an abundance of antioxidants to boost your immune system (thanks to the wild blueberries).

- Wild Blueberries are accessible year round if you buy ’em frozen!
- One of my favorite childhood snacks was pouring milk onto frozen blueberries. The milk froze around each berry creating a slushy and sweet treat. Try it with coconut milk (and orange zest….hahaha) for a flavor upgrade.

Spiced Quinoa and Oat Wild Blueberry Breakfast Bars

Serves 12
Ingredients
- 1 cup gluten free rolled oats
- 1/2 cup gluten free flour mix
- 1 cup cooked quinoa
- 1 teaspoon baking powder
- 1/2 cup maple syrup
- 1 teaspoon orange zest
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon sea salt
- 1/4 cup hemp seeds
- 2 eggs
- 2 tablespoons almond butter
- 2 tablespoon coconut cream
- 1 cup wild blueberries
Instructions
- Preheat the oven to 350 degrees F. Line a 9"x 9" baking sheet with un-bleached parchment paper and grease the sides with coconut oil
- In a large mixing bowl, whisk together the oats, flour, quinoa, baking powder, spices, salt and hemp seeds.
- In a separate bowl (or in your blender)--combine the almond butter, eggs, maple, coconut cream, orange zest and vanilla.
- Add the wet mixture to the dry ingredients, mixing everything together with a spatula until combined. Fold in the blueberries
- Transfer the batter into the prepared pan and smooth with a spatula.
- Bake on the center rack for 35-40 minutes until the bars are golden brown and firm to the touch.
- Remove and let cool completely in the pan. Slice into 12 squares.

Where do I find wild blueberries? Do I have to go out and pick them or are they sold in stores?
Hi Cindy! You can buy them frozen this time of year. I know that Whole Foods and possibly Wegmans sells them, the brand is called Wyman’s.
