A culinary school degree and years spent cooking does not absolve me from cooking insecurities and if I am honest–it happens often! You know, there are those recipes and cooking techniques (I’m talking to you pressure cooker) that you want to try but they just feel overwhelming! Sometimes they are silly like I used to be afraid to cook grains without a rice cooker and others are legit but that doesn’t mean you have to enable them! For me, my kitchen insecurities are more about a fear of failure than a kitchen catastrophe which is important to point out because a botched recipe isn’t really that scary as it can’t cause much harm!

True story–for some reason I have always been resistant to making my own yogurt though I could often be found stalking recipes and bloggers that did–it was some weird kind of torture! The first step in overcoming a fear is acknowledging it and then, with humor and compassion you have to challenge that fear! Venture into your experiment with curiosity and lightness so, if it flops (which happens!), you can simply laugh at yourself because you had fun in the process!
So, the yogurt…I have been dairy-free for years because…bluntly…we don’t get along but that doesn’t mean I am not envious of my son’s yogurt as I miss the creamy, rich texture and all of the goodies your can pile on top! So, this past weekend I had some alone time (yay!) and I decided to challenge myself to make… YOGURT! Like many things we are scared of—our expectations are far worse than reality and that was so true with this little adventure! You have no idea how easy this way and HOW GOOD IT TASTED! Everyone that came into my house this week was forced to try the yogurt because I was so in love with it. So…you can do this! You can make this yogurt and not only will it taste good, you will be proud of yourself for trying something new (no matter the result!)
- 2 cans of full fat coconut cream (refrigerate first)
- 2 tablespoons honey or maple syrup
- 1-2 probiotic capsules (contents removed and casing thrown out)
- 1 teaspoon arrowroot powder
- 1 qt mason jar
- Add the white coconut cream and half of the coconut water to the mason jar. Stir in the sweetener, probiotic powder and arrowroot. Cover and Seal
- Set in the oven with the light on for 24 hours!
- Chill and Serve with lots of goodies!
