We swapped creamy avocado for oil in this flavorful dressing. Refreshing and bright, the flavors are a taste of spring/summer during cold winter months. This recipe would be great tossed on a salad, veggies or fish. You could even serve this as a creamy cold soup. No matter the use…this recipe is a must try!
Avocado, Cucumber and Lime Dressing
- 1 avocado, peeled and seeded
- 2 cloves garlic
- 3/4 cup cilantro
- 1/4 English cucumber
- 1 orange, juiced
- 2 limes, juiced
- 1 tsp lime zest
- 1/2 cup water
- pinch of red pepper flakes (optional)
- salt and pepper to taste
Puree all ingredients in a food processor. Chill and serve.
Toss with vegetables, greens or serve as a soup.
