I know, it’s Monday and that usually means a “Mindful Monday” post but this little guy is long overdue! Spring is finally upon us and the “Monthly Morsels” blog post, which was cozy and hibernating over the past few months (wink, wink), is back and ready for some love. January, February and March have come and gone, but not without leaving behind a bounty of nourishing bites and many a lesson learned. Now that the trees are blooming and the sun is shining a little brighter, what better way to welcome this new beginning than with a quick recap of those long winter months. So while you might be spring cleaning from the settled winter, be sure not to throw away these worthy morsels! Oh, by the way, check back often as there are a ton of spring recipes that are in the line up–ready to be shared with you!

We welcomed the new year and I celebrated my birthday with a quick weekend getaway to a cozy little cabin in the Poconos. I did a whole lot of nothing which was exactly what I needed. Here are a few of your favorite posts from the month!

{Nourish} 

This versatile dish of Oats with Blueberries, Coconut, Ginger and Hemp warmed us up with its cozy spices and comforting texture on the cold days, and those citrus notes and blueberries really brightened some of those gray January mornings but this dish can be a staple year round–you could even serve it cold with fresh berries as they are coming into season. You could even switch it up with some seasonal spring fruits like strawberries and rhubarb. Or if you’re like my almost 5-year-old, Hudson, just add a little maple and cinnamon to your grains and call it a good day!

Let’s face it; everyone needs a little inspiration and encouragement every now and then to remind us that we CAN have good days, whenever we want them! It’s all about your attitude, and if you need a little help getting started on setting your daily intentions, just simply refer to this post– How to Guarantee a Good Day. Spring cleaning may be in full swing so this is a great time to recap the stinky truth about all of your personal care and cleaning products. Speaking of stinky– synthetic fragrances are a major toxin that are lurking in our daily lives. Studies have linked synthetic fragrance to disruptions in hormones, reproductive problems and diseases like cancer, autism, diabetes and obesity. So while your dusting off the mantels and packing up the winter boots, go ahead and throw out those synthetic scents like your dish soap, shampoo and laundry detergents, and treat yourself to nice little full house detox.

February:  Have two months gone by already? I can’t even believe it! Around this time in February I was taking in the magic of the Andes during my visit to Peru and Macchu Pichu. I would highly recommend adding this spot to your bucket list and check out my instagram page for some pictures from the trip! Outside of that, I was cooking up comfort foods, cozying up and  hunkering down to escape the cold! February offered me the opportunity for some personal growth as I made a conscious effort to let go of some “shoulds” that were holding me back!

{Nourish} –  I am a one pot meal junky and this was a winner! Enjoy this Chicken Sausage and Root Vegetable Cassoulet while you can as root vegetables are practically out of season! Or, you can save it for later because come fall you will be thanking me for this recipe!

March: While I realize March was only last month it seems like a year ago, doesn’t it?

{Nourish} – This Thai Stuffed Chicken with Cilantro, Ginger and Almond Marinade is a fun recipe to add to your repertoire!  The almond butter marinade is a fun play on a traditional Thai peanut sauce. While it looks a bit complicated, I promise, you can whip it up in 30 minutes or less!
