{Nourish} Orange and Smoked Paprika Root Vegetables

roasted root vegetablesIt’s that time of year. The season of the root vegetable and roasting a batch is a weekly labor of love in our house. To keep ’em from getting boring, I gave out routine root vegetables a major upgrade with this recipe and, in turn, yours did too! Sweet, seasonal citrus perfectly compliments this array of root vegetables and it only becomes more rich once you roast them up. oh, but the goodness doesn’t stop there. Smoked paprika which I like to refer to as the “bacon spice”, rounds out the sweetness with its delectable smoky virtues. Oregano–it’s my go-to herb. I love its savory, earthy flavor and I pretty much use it on everything I can! Add this to your weekly meal-prep or dinner line-up and I promise, you will be happy you did.

Ingredients
  1. 1 pound sweet potato, peeled, cut into 1-inch pieces
  2. 1 pound butternut squash, peeled, cut into 1-inch pieces
  3. 1/2 pound turnips, peeled, cut into 1-inch pieces
  4. 1/2 pound rutabagas, peeled, cut into 1-inch pieces
  5. 1/2 pound carrots, peeled, cut into 1-inch pieces
  6. 1/2 pound parsnips, peeled, cut into 1-inch pieces
  7. 1/4 cup of olive oil
  8. 2 teaspoons orange zest
  9. 2 tablespoons orange juice
  10. 1 teaspoon smoked paprika
  11. 1 tablespoon fresh oregano (or 1 teaspoon dried)
  12. salt and pepper
Instructions
  1. Preheat oven to 425.
  2. Combine all ingredients in a bowl. Toss to combine.
  3. Spread the root vegetables onto a sheet pan (or two). Roast, uncovered, for 45 minutes or until tender.
