Egg Cucumber Avocado Toast

 {Sponsored Post} Avocado toast is all the rage and it is for good reason! This simple, nourishing snack is ridiculously tasty and equally as good for you. We are avocado fanatics at my house. My four year old literally eats avocados right from the “bowl” (aka skin) and makes me giggle each time I hand him a half and he quickly asks, “did you put sea salt on it”? I love the decadence that results from smashing an avocado onto your favorite slice of bread. This is only trumped by the exciting number of toppings  you can add to the simple, yet wildly nourishing base avocado toast offers. 

Here is a recipe I created on behalf of Arnold’s Healthfull Breads that I know you are going to enjoy!

Spicy Avocado Egg Smash

1 Serving

Ingredients:

1 slice of Healthfull® Bread® Nuts and Seeds (Toasted)

1/4 avocado, mashed

1 hard-boiled egg, sliced

3 cucumber slices

1/4 teaspoon chili oil

Lime zest

Salt and pepper to taste

 

Directions:

Spread mashed avocado onto toast. Top with egg slices and cucumber sliced. Drizzle with chili oil. Season with lime zest, salt and pepper.
