{Nourish} DIY Salad Dressings

 

 

 

Even the highest quality store bought salad dressings can be loaded with salt, sweeteners and preservatives.  Sure, it seems convenient to have a bottle in the fridge but its even easier to make it yourself.   As with any from scratch recipe, you get to control the ingredients you use which allows you to pick good-for-you ingredients.  Save your store bought dressing bottle  and use it to store your homemade version. Here are some basic recipes to get you started but don’t be shy about adding your own twist.  You can switch up the herbs, experiment with different types of vinegar (there are plenty) or add healthy ingredients like flax oil or chia or seeds for some extra nutrition.

Lemon and Shallot (awesome on a raw kale salad)

  • 3/4 cup extra virgin olive oil
  • 3/4 cup lemon juice
  • 1 tsp lemon zest
  • 1 tbsp dijon mustard
  • 1 medium shallot, minced
  • salt and pepper to taste

Combine all ingredients in a bowl.  Whisk to combine.

White Balsamic and Thyme

  • 3/4 cup extra virgin olive oil
  • 3/4 cup white balsamic vinegar
  • 1 tsp dijon mustard
  • 1 tbsp fresh thyme, chopped (you can sub other hearty herbs like oregano and rosemary)
  • 1 clove of garlic, grated
  • salt and pepper to taste

Combine all ingredients in a bowl.  Whisk to combine.

Citrus and Walnut

  • 1/2 cup extra virgin olive oil
  • 1/4 cup walnut oil
  • 1/2 cup fresh orange juice
  • 1 tsp orange zest
  • 1/4 cup cider vinegar
  • 1 tsp dijon mustard
  • small shallot, minced
  • salt and pepper to taste

Combine all ingredients in a bowl.  Whisk to combine.

Green Goddess

  • 1 1/2 cups fat free, plain Greek yogurt
  • 1 small shallot
  • 1/2 cup chopped parsley
  • 1/4 cup chopped tarragon
  • 2 tbsp fresh chives or scallions, chopped
  • 2 tbsp fresh mint, chopped
  • 2 Tbsp lemon juice
  • 2 tbsp white wine vinegar
  • Salt and black pepper to taste

Combine all ingredients in a food processor or blender.
