{Nourish} Lovin’ Leftovers: Sushi Bowl

I am a huge fan of batch cooking grains.  Rice, quinoa, millet, you name it, I make a few cups at a time and keep the cooked version in the fridge so it cuts down on cook time later.  Cooked grains can be easily transformed into a bowl of healthy goodness using simple ingredients you likely have in your fridge.  This “sushi” inspired bowl was so simple and really satisfying.

 

 

“Sushi” Bowl

  • 1/2 cup rice, millet or quinoa
  • 1 tsp sesame, seaweed rice seasoning
  • 5-6 steamed shrimp
  • 4-5 slices cucumber
  • 1/4 mango, sliced
  • 1/4 avocado, sliced
  • scallion for garnish
  • 1 tbsp low sodium tamari

Sprinkle rice, quinoa or millet with rice seasoning.  Arrange remaining ingredients in bowl.  Drizzle with tamari.
