{Nourish} Get Snackin’: Pistachio Pairings take 2 with Crispy Harissa Chickpeas

I was in the kitchen today cooking up some harissa roasted root vegetables (recipe to come) and crunchy chickpeas and still had pistachios on my mind from my recent pairing post.  I was snacking on chickpeas and thought, Mmmmm…in-shell pistachios would be great with this. Why pistachios?  Did you know that discarded shells, left visible may be associated with increased snacking satisfaction?  In a recent study,  participants who left pistachio shells on their desk reduced their calorie consumption by 18 percent compared to participants who discarded shells immediately after consumption.

 

 

 

 

 

My pistachio pairing part 2:

  • In shell pistachios
  • harissa roasted chickpeas (recipe below)
  • pomegranate seeds

The harissa (a north African pepper and tomato paste) is a bit spicy so might be more suitable for an adult palate.  This sweet, spicy, nutty combination is to die for!

Harissa Roasted Chickpeas

  • 1 can chickpeas, rinsed, drained
  • 1 tablespoon harissa
  • 1 tsp honey
  • 1 tablespoon olive oil

Combine all ingredients in a bowl.  Season with salt and pepper. Spread onto a sheet pan (single layer) and roast for 45-60 minutes @ 400 until brown and crispy.
